Protein pancakes with Spalmabile RiCotta and blueberries

Ingredients
- 4 egg whites
- 80 g of oat flour
- 4 g of baking powder
- 1 tablespoon of sugar
- 2 tablespoons of milk or water
- 100 g of Spalmabile RiCcotta
- 125 g of fresh blueberries
Preparation
- Beat the egg whites, add the sifted flour together with the baking powder, sugar and milk, mixing gently from top to bottom with the help of a spatula.
- When the mixture is homogeneous, pour 2 tablespoons of the mixture onto a hot pan.
- The pancake should be turned when small holes form on the surface and it will be cooked briefly on the other side.
- Stuff them alternating the pancakes with spreadable RiCcotta and garnish with blueberries.
